Haricots verts à l'étouffée

1 pound Green Beans
2 good sized Shallots, peeled and roughly chopped
2 tablespoons Butter
salt (French Sea Salt or another finishing salt will give a superior taste)
freshly ground Black Pepper
Melt the butter in a sturdy skillet on low medium heat. Add the shallots and the beans and cover the skillet tightly.
Cook, stirring occasionally, for 20 to 30 minutes, or until the beans are cooked as you like them.
Season to taste with salt and pepper.
Makes 6 servings.

Honey-Glazed Wax Beans

6 servings
ingredients
1 1/4 pounds yellow beans or green beans, trimmed
1 tablespoon mild honey
3/4 teaspoon finely grated fresh Lemon zest
1/4 teaspoon salt
Preparation
Cook beans in a 4-quart pot of boiling salted water until just tender, 6 to 8 minutes. Drain in a colander, then immediately toss with honey, zest, and salt in a large bowl.

Green Bean & Mushroom Meadly

Ingredients
1/2 pound fresh green beans, cut into 1-inch lengths
2 carrots, cut into thick strips
1/4 cup butter
1 onion, sliced
1/2 pound fresh mushrooms, sliced
1 teaspoon salt
1/2 teaspoon seasoned salt
1/4 teaspoon garlic salt
1/4 teaspoon white pepper
Directions
1. Place green beans and carrots in 1 inch of boiling water. Cover, and cook until tender but still firm. Drain.
2. Melt butter in a large skillet over medium heat. Saute onions and mushrooms until almost tender. Reduce heat, cover, and simmer 3 minutes. Stir in green beans, carrots, salt, seasoned salt, garlic salt, and white pepper. Cover, and cook for 5 minutes over medium heat.
